Troubleshooting

The setting is greyed out

It’s controlled by a policy: either your organisation or unwanted software. Check chrome://policy; if you don’t recognise the policies and it’s your personal PC, scan for malware.

Frequently asked questions

Does this change Google’s homepage?

No. The startup page is separate: Settings > On startup.

Can I use different engines in Incognito?

Incognito uses the same default.

Summary

Go to Chrome Settings > Search engine and choose your engine, or add a custom one under Manage search engines. If it keeps changing, remove suspicious extensions and scan for adware.
