How to Make "Poor Man's" Candy

image

This was dubbed "Poor Man's" candy because it costs very little to make plenty of this sweet treat for family gatherings (Total cost usually less than .00). Not to mention that it's quick and easy!

Steps

  1. Melt the stick of butter on low heat. Slowly pour in the whole box of confectioner's sugar. Add a tablespoon of vanilla flavoring. Add a tablespoon or two of milk to fully dampen the mixture. The consistency should be like a stiff, soft paste. Cook over low heat for 3-5 minutes stirring continuously.
  2. Remove from heat and cool mixture in refrigerator until slightly chilled.
  3. Spoon out a small ball of the mixture and pat it out onto a non-stick surface. Try to keep the thickness even and pat it out into a circle.
  4. Spread peanut butter thinly over the mixture. Roll it up then slice it into 1/2 inch pieces.
  5. Keep cut candy in the refrigerator.

Tips

  • When adding milk, add only enough to dampen the whole mixture. The consistency needs to be doughy, pasty and thick.
  • Food coloring may be added to the mixture (red or green for Christmas!)
  • 1-2 tablespoons of Baking Cocoa can be added to give a chocolate flavor to the mixture.
  • When patting out the mixture to spread with peanut butter, use small portions.

Warnings

  • This candy is very sweet and rich and is not recommended for diabetics!
