How to Make Heavenly Rolls

Steps

1. Scald the milk over medium high heat. Pour it into a large bowl or the bowl of an electric mixer and add the butter. Stir the butter into the milk and set the bowl aside until the mix is lukewarm.
2. Stir the yeast & sugar into the milk. Allow to sit for at least 3 minutes. Add one cup of the flour and mix well, using a spoon or an electric mixer. Add the eggs, one at a time, beating well after each addition. Add the salt and another cup of flour, and mix until the dough is elastic and smooth (3-6 mins.).
3. If you are kneading by hand, add the remaining 2 1/2 cups flour and mix until the dough is slightly firmer but still soft and smooth. Turn it out onto a floured surface and knead it until it is smooth (2-3 mins.) If you are using an electric mixer, add the 2 1/2 cups flour and mix until just incorporated, then turn the dough out and continue as above.
4. Fill a bowl with hot water, pour it out, and dry it- this ensures that the cold won't kill your yeast. Butter the inside of the bowl.Roll the dough into a ball, rub it with a bit of butter to keep it soft and put it in the buttered bowl. Cover with saran wrap and set it in a warm place (about 68-72 degrees Fahrenhei) until it has doubled in size, about 2 hours.
5. Lightly flour two baking sheets.
6. Turn the dough out onto a well- floured surface, divide it in half and roll each half into a circle that is 1/8 inches thick and 16 inches in diameter. Remember to flour your rolling pin! Cut each circle into quarters, and cut each quarter into four equal triangles. Roll the triangles up, starting at the wide end, to form crescent shapes.
7. Place the rolls on the prepared baking sheets, leaving two inches between them and tucking the tails under the rolls. Cover the rolls in saran wrap and allow them to rise in a warm spot for at least four hours.
8. Heat the oven to 350 degrees Fahrenheit.
9. Bake the rolls on the center rack until they are golden. Remove, and serve immediately.

Tips

• When allowing the dough to rise, set it on the oven and turn it up to about 150 degrees. This speeds up the process slightly.
• If you are making these rolls for a crowd, get one recipe all the way to step 5, then start a new one and so on.
• If you have leftovers, heat them in a toaster and eat hot, with melted butter.
